An easy plant-based dinner that’s sweet, savory, and satisfying. We marinate this maple dijon tofu overnight, making it easy to pan-simmer after a long day at work.
When our daughter visited, she cooked this maple dijon tofu for dinner, and we were all impressed. The balance of sweet maple syrup and sharp mustard works perfectly with the tofu, and the marinade turns into a beautiful, thick sauce in the pan.

What you need to make maple dijon tofu
- Firm tofu – we have tips below for a firmer texture
- Gluten-free soy sauce – regular soy sauce works if you don’t need gluten-free
- Maple syrup – we prefer pure maple rather than a sugar-based substitute
- Dijon mustard – this is a key ingredient
- Apple juice – or blend ¼ apple with about 2 tablespoons of water
- Garlic-infused olive oil – can substitute regular olive oil and fresh garlic
- Apple cider vinegar
Tips for making this maple tofu dish

- Marinating overnight dramatically increases the flavor.
- For a firmer texture, we have two options. Usually, we use our crispy air fryer tofu nuggets recipe. Or, when we have it, we substitute tempeh for tofu in equal amounts.
- For a smoother marinade, we use a blender to mix the ingredients.
Serving suggestions


We serve this as the main course.
The first image shows it on a plate with pan-fried potatoes, carrots, and a salad.
We also like it as part of a shared meal, as in the second image, which includes our pickled cucumber salad.
Really, any vegetable is nice alongside. Two other favorites are our pumpkin cubes or steamed broccoli.
Our maple dijon tofu recipe

Maple Dijon Tofu
This pan-cooked marinated tofu is bursting with flavor and simple to make.
Ingredients
- 7 ounces (300 grams) firm tofu
- 4½ Tablespoons soy sauce
- 4 ½ Tablespoons maple syrup
- 2½ Tablespoons Dijon mustard
- ¼ cup Tablespoons apple juice
- 1½ Tablespoon garlic-infused olive oil
- 1½ teaspoon apple cider vinegar
Instructions
- Dry the tofu by wrapping the block in a tea towel and pressing to remove as much liquid as possible
- Cut the tofu into rectangular cubes, approximately 2 x ¾ inches.
- Thoroughly mix all the remaining ingredients (soy sauce, maple syrup, dijon mustard, apple juice, olive oil, and cider vinegar) in a bowl and add the tofu cubes, thoroughly coating them with the sauce.
- Cover the bowl and refrigerate to marinate overnight.
- After marinating, heat a pan to medium-high and arrange the tofu cubes in a single layer.
- Simmer in the pan until the sauce reduces and thickens.
- Once the sauce thickens, adjust the heat to glaze the tofu, turning as needed.
