- Gluten-free pasta
- Cherry tomatoes – I like to get the heirloom variety
- Bell pepper
- Kalamata olives – you can use any type of olive but I think Kalamatas are the best
- Red onion – I use red onions because they’re sweeter
- Parsley
Vegan pasta salad dressing ingredients
- Olive oil
- White balsamic vinegar (regular dark balsamic vinegar works too but is not as pretty)
- Raw sugar
- Minced garlic (or garlic-infused olive oil)
- Spices: basil, oregano, salt, black pepper

While I love the pasta salad exactly as is, I have been known to add extras. Either because one of us is craving a flavor, we want more protein, or simply because we have the ingredients and want to use them. Being that we are not vegan, we divided the options into those that keep the salad vegan, those that make it vegetarian, and other options.

- Diced tofu or tempeh – for more protein.

- Opt for high-quality gluten-free pasta to ensure it holds up well after cooking. We use a penne or fusilli made from rice and quinoa and found it to be a combination that works well for salads.
- Rinse the pasta under cold water after cooking.
- I like to add the dressing in advance and let the salad sit for a bit to allow the flavors to meld.

Gluten-free pasta salad
Simple, vibrant gluten-free pasta salad—ready in minutes.
Ingredients
- 1 pound gluten free pasta (450g)
- 1 cup cherry tomatoes, cut in half
- 1 bell pepper, chopped
- ½ cup kalamata olives, cut in half
- ½ cup red onion, chopped
- ¼ cup parsley, chopped
- 6 ounces feta, crumbled or small cubes (optional, not vegan)
Dressing
- ½ cup olive oil
- ⅓ cup white balsamic vinegar
- 2 cloves garlic, minced (or 1 Tablespoon garlic infused olive oil)
- 1 Tablespoon raw sugar
- 1 teaspoon dried basil (or 2 tablespoons fresh basil)
- ½ teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon ground pepper
Instructions
- Cook the pasta in boiling water until tender.
- While the pasta is cooking, chop all other ingredients and place them in a large mixing bowl.
- If time permits, mix all the dressing ingredients in a separate shaker bottle and shake until well-mixed and dissolved. Set aside.
- Drain the pasta and cool it under running water.
- Add the pasta to the bowl with the vegetables and gently mix.
- If you are adding feta cheese, add it to the bowl and stir trhough.
- Pour the dressing onto the salad and toss until thoroughly coated.
